Assistant Professor Özge Samancı from the Gastronomy and Culinary Arts Department at Yeditepe University will discuss how sherbet has been tantalising everyone from explorers to sultans to ordinary folk from the 16th-century throughout the Ottoman Empire’s rule.

Food historian Mary Işın’s book Sherbet & Spice is a good introduction into the history of sugar and sweets and is available from the Cornucopia store.
