The top floors of Armaggan’s astoundingly swish flagship store in Nuruosmaniye, just outside the main gate to the Covered Bazaar, are given over to The Culinary Arts Center (YESAM), established by the charitable organisation Turkish Cultural Foundation (TCF). It conducts research on Turkish culinary culture, past and present, and records foods and food-related traditions both in Turkey places with Turkish connections. It recreates traditional dishes, posts a montly recipe on its website and holds regular culinary events.
